  • large onion, finely chopped
  • cloves garlic, minced
  • medium tomatoes, diced
  • tablespoon olive oil
  • teaspoon paprika
  • Salt and pepper to taste
  • Lemon juice (optional)

Preparation:

  1. Prepare the Purslane: Rinse the purslane thoroughly to remove any dirt and trim the tough stems.
  2. Sauté Onion and Garlic: Heat olive oil in a skillet over medium heat. Add the chopped onion and minced garlic, sautéing until they become soft and fragrant.
  3. Add Tomatoes: Stir in the diced tomatoes and cook until they break into a sauce, which takes about 5-7 minutes.
